I've seen it three times
I was gazing at the Shuttle photos in the recent issue of Launch magazine and suddenly realized that my chnaces to see a launch are dwindling. I've seen the Shuttle three times but in all three cases it was atop its 747 carrier. The first time was during a stopover at Ellington Field, just north of NASA JSC. I think this viewing was after its 1982 landing at White Sands. I saw it again a few years later as we were headed from El Paso to Alamagordo. It was at a low altitude and the sighting was totally unexpected. The final time was as it did a flyby here in the DC area. I don't count seeing the Enterprise at the Smithsonian's Udvar Hazy annex.
